Low-Carb Cheeseburger Casserole

Ingredients:

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 3 large eggs
  • 1/4 cup chopped fresh parsley (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium-high heat until cooked through. Drain any excess fat.
  3. Add the diced onion and bell pepper to the skillet and cook until softened. Season with salt, black pepper, garlic powder, and onion powder.
  4. In a large mixing bowl, whisk together the heavy cream and eggs.
  5. Add the cooked ground beef mixture to the bowl and stir to combine.
  6. Pour the mixture into a 9×13 inch baking dish and sprinkle the shredded cheddar cheese on top.
  7. Bake for 25-30 minutes, or until the casserole is set and the cheese is golden and bubbly.
  8. Let cool for a few minutes before serving and garnish with fresh parsley if desired.
