Ingredients:
- 2 medium zucchinis, spiralized
- 1 lb ground beef or ground turkey
- 1/2 cup diced onion
- 2 cloves of garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese for topping
Instructions:
- Heat a large skillet over medium-high heat.
- Add the ground beef or turkey, diced onion, and minced garlic. Cook until the meat is browned and the vegetables are softened.
- Drain any excess fat from the skillet.
- Add the diced tomatoes, tomato paste, dried basil, dried oregano, and stir to combine.
- Bring the mixture to a simmer and cook for about 10-15 minutes, or until the sauce has thickened.
- Season with salt and pepper to taste.
- While the meat sauce is cooking, spiralize the zucchinis to make the noodles.
- Heat a separate skillet over medium-high heat and cook the zucchini noodles for about 2-3 minutes, or until they are slightly softened but still have a little bit of crunch.
- Serve the zucchini noodles topped with the meat sauce and grated Parmesan cheese.
Note: You can use any ground meat you prefer, or even make it vegetarian by using vegetables like mushrooms or eggplant.
