Keto Zucchini Noodles with Meat Sauce

Ingredients:

  • 2 medium zucchinis, spiralized
  • 1 lb ground beef or ground turkey
  • 1/2 cup diced onion
  • 2 cloves of garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for topping

Instructions:

  1. Heat a large skillet over medium-high heat.
  2. Add the ground beef or turkey, diced onion, and minced garlic. Cook until the meat is browned and the vegetables are softened.
  3. Drain any excess fat from the skillet.
  4. Add the diced tomatoes, tomato paste, dried basil, dried oregano, and stir to combine.
  5. Bring the mixture to a simmer and cook for about 10-15 minutes, or until the sauce has thickened.
  6. Season with salt and pepper to taste.
  7. While the meat sauce is cooking, spiralize the zucchinis to make the noodles.
  8. Heat a separate skillet over medium-high heat and cook the zucchini noodles for about 2-3 minutes, or until they are slightly softened but still have a little bit of crunch.
  9. Serve the zucchini noodles topped with the meat sauce and grated Parmesan cheese.

Note: You can use any ground meat you prefer, or even make it vegetarian by using vegetables like mushrooms or eggplant.
