Keto Chicken Parmesan

  • 4 boneless, skinless chicken breasts
  • 1/2 cup almond flour
  • 2 eggs, beaten
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow dish, mix together the almond flour, grated Parmesan cheese, Italian seasoning, salt, and pepper.
  3. In another shallow dish, beat the eggs.
  4. Dip the chicken breasts in the beaten eggs, then coat them in the almond flour mixture.
  5. Heat a large skillet over medium-high heat and add 1 tbsp of oil.
  6. Add the chicken breasts to the skillet and cook for about 2-3 minutes per side, or until golden brown.
  7. Remove the chicken from the skillet and place it in a baking dish.
  8. Top each chicken breast with marinara sauce and shredded mozzarella cheese.
  9. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  10. Let cool for a few minutes before serving and enjoy!

Note: You can serve it with a side of cauliflower rice or zucchini noodles for a complete low-carb meal.
