- 4 boneless, skinless chicken breasts
- 1/2 cup almond flour
- 2 eggs, beaten
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
Instructions:
- Preheat the oven to 400°F (200°C).
- In a shallow dish, mix together the almond flour, grated Parmesan cheese, Italian seasoning, salt, and pepper.
- In another shallow dish, beat the eggs.
- Dip the chicken breasts in the beaten eggs, then coat them in the almond flour mixture.
- Heat a large skillet over medium-high heat and add 1 tbsp of oil.
- Add the chicken breasts to the skillet and cook for about 2-3 minutes per side, or until golden brown.
- Remove the chicken from the skillet and place it in a baking dish.
- Top each chicken breast with marinara sauce and shredded mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Let cool for a few minutes before serving and enjoy!
Note: You can serve it with a side of cauliflower rice or zucchini noodles for a complete low-carb meal.
