Ingredients:
- 1 head of cauliflower, finely chopped or grated
- 2 tbsp olive oil
- 1/2 cup diced onion
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 2 cloves of garlic, minced
- 3 eggs, whisked
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- Salt and pepper to taste
- Optional: diced green onions and sesame seeds for garnish
Instructions:
- Heat a large skillet over medium-high heat.
- Add the olive oil, diced onion, diced carrots, frozen peas, and minced garlic. Cook until softened, about 5-7 minutes.
- Remove the vegetables from the skillet and set aside.
- In the same skillet, add the cauliflower and cook for about 5-7 minutes, or until slightly softened and lightly browned.
- Push the cauliflower to one side of the skillet and add the whisked eggs to the other side. Scramble the eggs and then mix them with the cauliflower.
- Add the cooked vegetables back to the skillet with the cauliflower and eggs.
- Stir in the soy sauce and sesame oil, and season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, or until heated through.
- Garnish with diced green onions and sesame seeds (if desired) and enjoy!
Note: You can add any vegetables or meats you like to make it more flavorful
