Keto Cauliflower Fried Rice

Ingredients:

  • 1 head of cauliflower, finely chopped or grated
  • 2 tbsp olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 2 cloves of garlic, minced
  • 3 eggs, whisked
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • Salt and pepper to taste
  • Optional: diced green onions and sesame seeds for garnish

Instructions:

  1. Heat a large skillet over medium-high heat.
  2. Add the olive oil, diced onion, diced carrots, frozen peas, and minced garlic. Cook until softened, about 5-7 minutes.
  3. Remove the vegetables from the skillet and set aside.
  4. In the same skillet, add the cauliflower and cook for about 5-7 minutes, or until slightly softened and lightly browned.
  5. Push the cauliflower to one side of the skillet and add the whisked eggs to the other side. Scramble the eggs and then mix them with the cauliflower.
  6. Add the cooked vegetables back to the skillet with the cauliflower and eggs.
  7. Stir in the soy sauce and sesame oil, and season with salt and pepper to taste.
  8. Cook for an additional 2-3 minutes, or until heated through.
  9. Garnish with diced green onions and sesame seeds (if desired) and enjoy!

Note: You can add any vegetables or meats you like to make it more flavorful
