Ingredients:
- 4 large eggs
- 1/4 cup heavy cream
- 1 cup broccoli florets, steamed and chopped
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- 2 tbsp butter or oil for frying
Instructions:
- In a medium mixing bowl, whisk together the eggs, cream, salt and pepper.
- In a skillet over medium heat, melt the butter or oil.
- Add the steamed and chopped broccoli florets to the skillet and sauté for 2-3 minutes.
- Pour the egg mixture over the skillet, and let cook for 2-3 minutes, until the edges start to set.
- Sprinkle the shredded cheddar cheese over one half of the omelette.
- Carefully fold the other half of the omelette over the cheese.
- Cook for an additional 2-3 minutes, until the cheese is melted and the eggs are fully cooked.
- Serve hot, garnished with additional cheese or fresh herbs if desired.
