Keto Broccoli and Cheddar Omelette

Ingredients:

  • 4 large eggs
  • 1/4 cup heavy cream
  • 1 cup broccoli florets, steamed and chopped
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tbsp butter or oil for frying

Instructions:

  1. In a medium mixing bowl, whisk together the eggs, cream, salt and pepper.
  2. In a skillet over medium heat, melt the butter or oil.
  3. Add the steamed and chopped broccoli florets to the skillet and sauté for 2-3 minutes.
  4. Pour the egg mixture over the skillet, and let cook for 2-3 minutes, until the edges start to set.
  5. Sprinkle the shredded cheddar cheese over one half of the omelette.
  6. Carefully fold the other half of the omelette over the cheese.
  7. Cook for an additional 2-3 minutes, until the cheese is melted and the eggs are fully cooked.
  8. Serve hot, garnished with additional cheese or fresh herbs if desired.

This omelette is perfect for a ketogenic diet because it is high in healthy fats, protein and low in carbs. It’s also a great way to get some veggies in your breakfast, and can be easily customized with your favorite low carb vegetables and cheese.
