Ingredients:
- 2 lb pork shoulder or pork butt
- 1/4 cup of your favorite BBQ sauce
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
Instructions:
- In a small bowl, mix together the BBQ sauce, olive oil, smoked paprika, garlic powder, onion powder, salt and black pepper.
- Rub the mixture all over the pork shoulder or pork butt.
- Place the pork in a slow cooker and cook on low heat for 8-10 hours, or until the pork is fall-apart tender.
- Remove the pork from the slow cooker and use two forks to shred it.
- Return the shredded pork to the slow cooker and toss it in the remaining juices.
- Serve the pulled pork on a bed of cauliflower rice, lettuce, or a low-carb bun.
Note: You can make it in Instant Pot or oven as well.
