Ingredients:
- 1 head of green cabbage, chopped
- 1 onion, diced
- 2-3 cloves of garlic, minced
- 1-2 cups diced celery
- 1-2 cups diced carrots
- 1 can diced tomatoes
- 1-2 cups of chicken or vegetable broth
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Optional: additional vegetables like bell peppers, zucchini, or mushrooms
- Optional: additional protein like diced chicken or ground beef
Instructions:
- Heat a large pot or Dutch oven over medium heat. Add the olive oil and let it heat up.
- Add the diced onions and garlic to the pot and sauté for 2-3 minutes, until softened.
- Add the diced celery and carrots, and sauté for an additional 2-3 minutes.
- Stir in the diced tomatoes, broth, paprika, thyme, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes.
- Add the chopped cabbage and any additional vegetables you desire to the pot. Stir to combine.
- Bring the soup back to a simmer and let it cook for an additional 15-20 minutes or until the vegetables are tender.
- If you want to add protein like diced chicken or ground beef, add it during the last 10-15 minutes of cooking.
- Taste and adjust the seasoning as needed.
- Serve the soup hot and enjoy!
