Easy Cabbage Soup – Weight Loss Cabbage Soup

Ingredients:

  • 1 head of green cabbage, chopped
  • 1 onion, diced
  • 2-3 cloves of garlic, minced
  • 1-2 cups diced celery
  • 1-2 cups diced carrots
  • 1 can diced tomatoes
  • 1-2 cups of chicken or vegetable broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional: additional vegetables like bell peppers, zucchini, or mushrooms
  • Optional: additional protein like diced chicken or ground beef

Instructions:

  1. Heat a large pot or Dutch oven over medium heat. Add the olive oil and let it heat up.
  2. Add the diced onions and garlic to the pot and sauté for 2-3 minutes, until softened.
  3. Add the diced celery and carrots, and sauté for an additional 2-3 minutes.
  4. Stir in the diced tomatoes, broth, paprika, thyme, oregano, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes.
  6. Add the chopped cabbage and any additional vegetables you desire to the pot. Stir to combine.
  7. Bring the soup back to a simmer and let it cook for an additional 15-20 minutes or until the vegetables are tender.
  8. If you want to add protein like diced chicken or ground beef, add it during the last 10-15 minutes of cooking.
  9. Taste and adjust the seasoning as needed.
  10. Serve the soup hot and enjoy!

Note: You can add different seasonings to make it more flavorful
