Cauliflower Fried Rice

Ingredients:

  • 1 head of cauliflower, grated
  • 2 tablespoons of coconut oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1/2 cup of diced carrots
  • 1/2 cup of frozen peas
  • 2 eggs, lightly beaten
  • 2 tablespoons of soy sauce
  • 2 green onions, thinly sliced
  • Salt and pepper, to taste

Directions:

  1. Begin by grating the cauliflower using a box grater or a food processor, until it resembles rice-like texture.
  2. In a large skillet, heat the coconut oil over medium-high heat.
  3. Add the onion and sauté for 2-3 minutes, or until softened.
  4. Stir in the garlic, carrots and peas and sauté for an additional 2-3 minutes.
  5. Add the cauliflower and soy sauce, stirring well to combine.
  6. Create a small well in the center of the skillet and pour in the beaten eggs.
  7. Scramble the eggs and stir it into the cauliflower mixture.
  8. Season with salt and pepper, to taste.
  9. Serve in bowls and garnish with green onions before serving.
