Broccoli Cheddar Soup

Ingredients:

  • 1 head of broccoli, cut into florets
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated cheddar cheese
  • 1/4 cup diced onion
  • 2 cloves of garlic, minced
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions:

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and minced garlic, and cook until softened.
  3. Add the broccoli florets and chicken broth to the pot, bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the broccoli is tender.
  4. Remove the pot from the heat and use an immersion blender or transfer the soup to a blender and blend until smooth.
  5. Return the soup to the pot and add the heavy cream and grated cheddar cheese.
  6. Stir until the cheese is melted and the soup is heated through.
  7. Season with salt and pepper to taste.
  8. Serve the soup hot and enjoy!

Note: you can use different type of cheese or vegetables to make it more flavorful.
