Ingredients:
- 1 head of broccoli, cut into florets
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated cheddar cheese
- 1/4 cup diced onion
- 2 cloves of garlic, minced
- 2 tbsp butter
- Salt and pepper to taste
Instructions:
- In a large pot, melt the butter over medium heat.
- Add the diced onion and minced garlic, and cook until softened.
- Add the broccoli florets and chicken broth to the pot, bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the broccoli is tender.
- Remove the pot from the heat and use an immersion blender or transfer the soup to a blender and blend until smooth.
- Return the soup to the pot and add the heavy cream and grated cheddar cheese.
- Stir until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Serve the soup hot and enjoy!
Note: you can use different type of cheese or vegetables to make it more flavorful.
