Keto Avocado and Egg Breakfast

Ingredients:

  • 1 avocado
  • 2 large eggs
  • Salt and pepper to taste
  • 1 tbsp butter or olive oil
  • Optional toppings: diced tomatoes, chopped bacon, chopped chives, grated cheese

Instructions:

  1. Cut the avocado in half and remove the pit.
  2. Use a spoon to create a small well in the center of each avocado half, being careful not to puncture the skin.
  3. Heat a skillet over medium heat, add butter or olive oil
  4. Crack an egg into each avocado well.
  5. Season with salt and pepper.
  6. Cook for about 3-4 minutes, or until the whites are set but the yolks are still runny.
  7. Carefully remove the avocado and eggs from the skillet and place them on a plate.
  8. Add your desired toppings and enjoy!

Note: You can also bake it in the oven for about 8-10 minutes at 425°F
