Ingredients:
- 1 avocado
- 2 large eggs
- Salt and pepper to taste
- 1 tbsp butter or olive oil
- Optional toppings: diced tomatoes, chopped bacon, chopped chives, grated cheese
Instructions:
- Cut the avocado in half and remove the pit.
- Use a spoon to create a small well in the center of each avocado half, being careful not to puncture the skin.
- Heat a skillet over medium heat, add butter or olive oil
- Crack an egg into each avocado well.
- Season with salt and pepper.
- Cook for about 3-4 minutes, or until the whites are set but the yolks are still runny.
- Carefully remove the avocado and eggs from the skillet and place them on a plate.
- Add your desired toppings and enjoy!
Note: You can also bake it in the oven for about 8-10 minutes at 425°F
