Keto BBQ Pulled Pork

Ingredients:

  • 2 lb pork shoulder or pork butt
  • 1/4 cup of your favorite BBQ sauce
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. In a small bowl, mix together the BBQ sauce, olive oil, smoked paprika, garlic powder, onion powder, salt and black pepper.
  2. Rub the mixture all over the pork shoulder or pork butt.
  3. Place the pork in a slow cooker and cook on low heat for 8-10 hours, or until the pork is fall-apart tender.
  4. Remove the pork from the slow cooker and use two forks to shred it.
  5. Return the shredded pork to the slow cooker and toss it in the remaining juices.
  6. Serve the pulled pork on a bed of cauliflower rice, lettuce, or a low-carb bun.

Note: You can make it in Instant Pot or oven as well.
